I think it was in Barcelona sometime around autumn of 2005 when we stumbled upon our favorite tapa bar near the Picasso Museum. When I say stumbled, I mean literally. We had just finished drinking in the wonder of the various works of Picasso which hung in a small, wooden building with old crooked windows and shutters that still worked to shade the sunbeams whose dance threatened the very livelihood of some his greatest pieces.

I am not sure if we were so awestruck by the expanse of his repertoire or we dallied so long through the maze of paintings being transported and lost in both time and space or maybe it was both because when we submerged it was evident we had blissfully forgotten to handle the groaning of our hungry stomachs.

Problem? Shouldn’t be, after all we are in the pulse of Barcelona, gastronomy heaven and tapa bar paradise. But WHERE we were was in Europe and they don’t thrive on “oras continuas” and allow a few famished tourists to break a thousand-year old tradition called “siesta”. Yes, that’s correct, siesta; the fabulous mid-day break for 3 hours where all things “stop” and everyone curls up inside to digest their mid-day feast and refurbish their soul. This wonderful “tradition” happened to slip past the dazed minds of a couple of foreign travelers.

Despite the numerous eateries within a small radius, our luck was outweighed by the tug of the 2 o’clock hour and weary proprietors who were noshing on delicacies before drifting off in slumber.

I think it was the last window we peered in while testing the door in hopes we might magically discover an unlocked entrance and an array of treats. As we glanced around the restaurant our eyes locked with the elderly lady inside who was making her way to a solo table with a tray of tapa delights. Her eyes softened with a motherly instinct and she waved her crooked hand and summoned us to enter through the side door. There wasn’t a moment of hesitation as we rushed around the building and entered the small, rustic restaurant.

We gladly sat down and breathed a sigh of relief as her daughter brought us a carafe of house sangria and a basket of fresh bread. The grandmother had disappeared but only to remerge shortly with round, flat shaped delight which at first glance somewhat resembled some sort of soufflé with fresh oregano, a few olives, and a side of a bright orange-red sauce. I had no idea what this mystery plate was and the hunger pains were overriding my normal interrogation of curiosity. Instead I was affixed on her methodical slicing into perfect wedges and finishing with a dollop of sauce and a handful of olives.

I nodded my head in deep gratitude and sliced my fork through what I could see of layers of thinly sliced potatoes and onions encased in a baked egg mixture. My mouth was watering as I could smell the aroma of this intriguing dish. As I allowed my senses to distinguish all the flavors inside my mouth, first savory and then a hint of smoke and then slight sweetness from the sauce, the subtle textures made up a perfect harmonic bite.

I opened my eyes and glanced at the elderly woman who stood so proudly as the creator of this dish and the answer to our hungry woes. I smiled and said from the depths of gratitude, “Gracias, signora, gracias”, I think the pleasure on my face said how deep it went…..

I’ll never forget my first tortilla espanola from the heart of my new Spanish friend.

Ingredients
  • 6 - Yukon Potatoes, peeled and thinly sliced
  • 2 - Sweet Onions, thinly sliced
  • 7 - Large Eggs, whisked
  • Olive Oil
  • Sea Salt
  • Fresh Ground Black Pepper
Instructions
  1. Preheat oven to 350.
  2. In a oven-proof casserole dish, add potatoes and toss with a generous amount of olive oil (these are going to "poach" in the oven). Cover and cook for 20 min.
  3. In a medium sized saute pan, add some olive oil and onions. Cook until translucent and "sweet" (don't caramelize). Remove from stove and add to potatoes, re-cover and cook another 20 minutes. Remove and cool to room temp. Fold in egg mixture and season with salt.
  4. In another medium sized sauté pan, line with parchment paper and heat on high for a couple minutes. Add potato/egg mixture and reduce to medium heat. Cook until firm and set, about 15-20 minutes. Make sure bottom browns but not burns.
  5. Turn oven to high broil and add sauté pan and broil for 5 minutes or until golden spots form on top. Remove from oven and invert onto a platter and remove parchment paper. Cool to room temperature, slice and serve with romesco sauce.

The smell of the food, the sounds of the sizzle on the grill, the taste only outdoor cooking can give, and most of all the time of year, SUMMER!!! Couple grilling with the longer days, the warmer nights and ahhhh can I really handle the constant pleasure of this time of year? I think so, it makes me feel like a kid in a candy store; free, indulgent, and full of excitement…what a wonderous experience!

I know it technically isn’t summer but the weather is being a major tease and running havoc on my“itch” to be outside breaking in the grill for the season and putting in our garden.

Last Sunday was a BEAUTIFUL 75 degrees and there was just NO WAY I was going to let the opportunity slip away to indulge ourselves to our favorite flavors and satisfying our taste buds; which BTW, were screaming for some grilled Vietnamese chicken along with scallion white rice. (Oh AND we snuck in a fantastic rose to kick the season off but we can talk about that in another post otherwise I’ll get sidetracked and not finish getting this recipe out to you….seriously).

Thank God I had looked at the forecast and prepped the chicken 24 hours ahead in a delicious marinade because that is the secret to this simple but super flavorful dish. You REALLY need to marinate it for 24 hours, the flavors develop so intensely while breaking down the protein in the chicken and this leaves it sooo moist and yummy….you absolutely CAN’T skip this step…

Now, since I had done MY job, I figured I could kick back (with that rose, did I mention that?) and cheer Enrique on while he cleaned up the grill from the winter slumber (aren’t I just the most supportive wife?). It was needing some attention as it rode through some tough weather days and frigid nights but nothing a little TLC couldn’t fix…..honestly, it really didn’t take too long to get it ready and besides we were so happy outdoors, it didn’t matter if it had.

The old grill started up like a champ and the chicken was ready so the time had come to test out the flame and kick back with a cigar. Ohhh, the first smell of the grill and the first sound of the sizzle for the season is probably my favorite and I just wanted to be there all the while the chicken cooked away.

I set the table outside, put candle in the middle and a bouquet of fresh flowers. We kicked back and chatted, giggled, indulged, and reminded ourselves that we were just at the beginning of the this magical summer season…

Ingredients
  • 6 Chicken Breast, Bone-In
  • 2 Bunch of Scallions, Sliced
  • 1 Small Piece of Ginger, Minced
  • 4 Cloves of Garlic, Minced
  • 2 Stalks of Lemongrass, Sliced
  • 1 Small Bunch of Cilantro, Roughly Chopped
  • 1½ C of Soy Sauce (I use Braggs)
  • ¼ C Olive Oil
  • 2 T Sesame Oil
  • 3 T Chinese Black Vinegar
  • 2 C Jasmine Rice
  • 4 C Low Sodium Chicken Broth (Preferably Home-made)
Instructions
  1. Night Before:
  2. In a ziplock bag, combine soy sauce, vinegar, olive oil, sesame oil, garlic, ginger, lemongrass, small handful of scallions, and cilantro. Put in chicken breasts and mix around well. Set in a glass container (in case it leaks) and put in fridge for 24 hours.
  3. Day of Preparation:
  4. Remove chicken, put on tray, and discard marinade. Take off any large pieces of cilantro, lemongrass, and scallion. Leave out for 30-40 minutes to bring to room temperature.
  5. While chicken is coming to temperature, heat grill on high. Before putting chicken on, turn down to medium and brush grill with a papertowel soaked in olive oil so chicken won't stick. Start with skin side down and grill, turning frequently until done, about 30-35 minutes.
  6. While chicken is grilling, put rice to a pot on stove and add broth and a pinch of salt, stir. When broth comes to boil add scallions, stir, cover, and turn down to simmer until broth is absorbed, about 30-35 minutes (check absorption starting at 20 minutes). Once broth is absorbed, quickly open cover and put on a dishcloth, cover again, and turn off heat and leave on stove for 10 minutes.
  7. When chicken is done, let rest for 10-15 minutes. Slice into medallions slices and put over scallion rice. Serve with additional soy sauce for those that want it.
  8. *Note - Don't add salt or pepper to this recipe, marinating breaks down proteins to keep chicken moist AND adds a lot of salt.

There probably isn’t an easier recipe than this one which makes it either good or not so good to post…nonetheless, I am putting this on the blog because of all the times I just need a memory jog or a slightly new twist to an old classic.

Grilled harvest vegetables rock on their own but top them with some fresh burrata cheese and you will believe you have gone to another dimension of food! Something magical happens when the fresh, soft burrata hits the warm veggies and melts over them creating ooey gooey goodness…..oh the textures and tastes of comfort food bliss, life’s simple pleasures for a foodie…..

I make a big batch of these on the weekend, some for immediate consumption and some for the coming week. My choices of what to grill this time of year is completely dependent on my farming buddies at the local market but if you aren’t a frequent goer to these events, any grocery store will have a great selection of organic yummies so have some fun and pick what you will actually eat….

Shopping and choosing is the hardest part of this recipe so after that task is completed clean them up, slice in half, pour over some olive oil, and sprinkle with salt and pepper…last but not least, grill em’! Honestly, that is it…not much sexier than that but what will be is the food experience waiting for you when they are done.

Copy this recipe exactly or change up the veggies and the cheese, your choice. Every time you do, it will be a new culinary delight…..

Ingredients
  • Harvest Vegetables:
  • 2 - Zucchini
  • 4 - Assorted Bell Peppers
  • 2 - Eggplant
  • Burrata Cheese
  • Olive Oil
  • Sea Salt
  • Fresh Ground Pepper
Instructions
  1. Wash and cut vegetables length-wise. Top with olive oil and salt and pepper.
  2. Heat Grill. Place vegetables onto grill and cook until desired doneness.
  3. Remove from grill and cut into large pieces. Mix together and add more olive oil, salt and pepper, if desired.
  4. Top with chunks of burrata cheese and serve warm

I am a TOTAL sucker for Italian desserts, TOTAL. Well, a sucker for anything Italian really but since I am not a HUGE sugar girl, the desserts the Italians feast on to me are a perfect balance of cake, sugar, fruit, and indulgence…

I stumbled across this olive oil ricotta cake with plums from smitten kitchen during fruit harvest. I was getting totally burnt out of canning “another version of plum or peach butter” and was seriously looking for a small butter knife to put me out of my misery…..honestly it was pretty bad about day 20. I mean after 150 jars of fruit butter you are spent, trust me, SPENT.

I decided to hit the Internet and not the knife drawer to get some creative ideas on desserts for during the winter. I wanted something I could pull out of the freezer and have fresh and delicious sweet fruit from the fall harvest. This criterion doesn’t leave a ton of options so when I found this cake recipe, I was totally STOKED! It was perfect. I love ricotta, olive oil, and cake! Now I had the option to change up the fruit on top or mix some into the batter or whatever, I just knew me and my sweet tooth would be jazzed come December.

This olive oil ricotta cake is the happiest of both sides of the dessert fence. It satisfies the sweet tooth AND I don’t feel as guilty because it isn’t drudged in frosting and 3 layers tall. (Although the whip cream I usually make could become an argument), but nonetheless, it still feels a bit “guiltless” than some of others…

If you are finding yourself canning and looking for a butter knife, make this cake. If you find yourself feeling guilty just remember, who cares it’s LA DOLCE VITA…isn’t that Italian way….now go and enjoy and put down the butter knife.

Ingredients
  • Butter for pan
  • 1 cup fresh, full-fat ricotta
  • ⅓ cup olive oil
  • 1 cup granulated sugar
  • 1 tablespoon freshly grated lemon zest
  • 2 large eggs
  • 1½ cups all-purpose flour
  • 1½ teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 9-10 small plums, halved, pitted, and set aside (I used fresh Italian Plums but any type would work)
  • 1 tablespoon sugar or honey
  • Confectioner's sugar, for dusting
Instructions
  1. Preheat your oven to 350° F, and butter and flour a 9-inch springform.
  2. In a large mixing bowl, combine and whisk the ricotta, oil, sugar, and zest together.
  3. Add one egg, whisk well; add the next, whisk again.
  4. Sift all of the dry ingredients, except for the confectioner's sugar, directly over the wet ingredients you just whisked together. Mix with a spoon gently until just combined.
  5. Pour the batter into the cake pan, spreading it out evenly as needed. If your plums are very tart, toss them with a tablespoon of sugar or honey, and place them in the top of the cake, cut-side down. Bake for 35 minutes, or until the top is golden brown, the edges are pulling away from the pan, and a toothpick comes out of the cake cleanly. (Depending on your oven, this could take up to 45 minutes.) Cool in the pan for 10-15 minutes, then turn out to finish cooling on a rack. Dust with confectioner's sugar, and serve slightly warm or at room temperature. This cake is awesome with whipped cream!
